We use predominantly chocolate made from the Criollo cocoa bean from South America, which has been cultivated for over three thousand years. Why Criollo? Because chocolate experts have agreed for centuries: South and Central American cacao is the most flavorful and aromatic in the world. When you buy Legacy Chocolates truffles you are patronizing small-scale, sustainable farmers in Latin America, enabling them to continue to plant and preserve this precious heirloom variety of cocoa bean. Our truffles are made and sold fresh by hand. They are astonishingly aromatic and flavorful. You will never buy months-old chocolate from us. We never use preservatives, which means you should store our truffles and medallions in the refrigerator. For fullest flavor and silkiest texture, be sure and bring them to room temperature before eating.
